My name is Pablo Salva and I am the Founder of Rosalina Abuela e Hija.

In the case of Rosalina Abuela e Hija, we must go back 60 years, highlighting the figure of a tireless worker “Don Gumercindo Salva”, a wise craftsman and connoisseur of all the farming that the land needs for it to flourish in fruit.

RAISINS

A trip to the past

Humanity has enjoyed raisins since the dawn of civilization.

“In ancient Rome, raisins were used as barter currency.”

The early Phoenicians and Egyptians were responsible for expanding the popularity of raisins throughout the Western world. Because of their large storage capacity and ease of transportation, raisins traveled with Christopher Columbus, tickled George Washington’s palate on Mount Vernon, helped spur Robert E. Peary to conquer the North Pole in 1908 , and accompanied astronaut Scout Carpenter in space in 1962. As they were very easy to transport, preserve and store, raisins accompanied Christopher Columbus on his first voyage to discover the Americas. The rest of the sailors also knew the virtues of raisins and carried them in the holds of their ships on the great historical expeditions.

As a curiosity, the first president of the United States George Washington loved them. They accompanied Robert E. Peary when he first reached the North Pole in 1908. And incredible as it may seem, in 1962, they accompanied astronaut Scout Carpenter in space. In ancient Rome, raisins were used as barter currency, to make medicines, as prizes in athletic competitions, and even to pay taxes. Etymology of the word raisin



The word raisins is a term derived from the abbreviation of the Latin phrase uva passa. Contrary to what one might think, it does not come from “passing” the grain of the grape, until it dries. Rather, it is a voice whose etymology is found in the Latin verb pandere, from the passive participle passus, passa, passum = extended, spread out, spread out in the air to dry. With that semantic value the term was used at the end of the 14th century.

SOME IMPORTANT CONSIDERATIONS ABOUT OUR DRYERS

Although for many years, there have been different methods of obtaining the raisin product, ours observes other specific characteristics to achieve the superior quality that we offer, for example: the grapes are spread out in suspended 3 and 4-story dryers, on whose structure , the product dries on fabrics of the half-shade type, supported with wires between props and wooden braces. This means that the grapes have total natural ventilation, since they do not come into contact with the floor or the ground, with partial solar radiation in the morning and afternoon, which causes them to lose moisture, which is not the same as dehydration. . This is how the grape converted into raisins preserves its entire body in pulp, sugar content and its nutritional properties. The “natural” drying process lasts approximately 40 to 50 days. Another detail to take into account is that the raisins in suspended dryers are not affected by rain, fungi and insects that vary the natural flavor of the product. In short, this system guarantees hygiene and health for the consumer.  

HOW DO WE PRODUCE ?

The raisin is nothing more than the grape (product of the vine), dried. That is, moisture is extracted from the fruit by the action of natural phenomena such as solar radiation and ventilation.

WHERE DO WE PRODUCE ?

Our raisins come from the Fiambalá vines and vineyards. They are located in the province of Catamarca, Argentina.

SULTANINA – NEVADO, SIN SEMILLA

Light-colored variety, thin skin and sweet flavor from birth. It is obtained from the fusion between Dattier de Beirut and Sultanina, which in ROSALINA finds the optimal conditions to achieve an exceptional version. Its transparency and texture are achieved through natural drying in the shade. Unique quality to give us an experience to our senses.

ROSADA 102-011 “LA TINOGASTEÑA”- SIN SEMILLA

Created with our identity and defined by our soil, it is the variety that makes us feel the flavor of our roots. It is characterized by being a late variety with a spherical berry, a large, pink piece, a neutral flavor and a thick skin. The nature of its cluster is large, vigorous and diverse, with high sugar content and large productions in our rich Tinogaster land. The shade-drying that we make at ROSALINA gives consistency and softness to the pulp to appreciate the experience of our ancestors.

CEREZA CON SEMILLA

Bluish-black to violet-pink in color, with a sweet, semi-crispy flavor. It is recognized for the beauty of its shiny and elongated leaves; for its free and strong cluster capable of bearing fruit in all kinds of conditions. The seeds of this variety are a fundamental part of its identity and bring with them the knowledge of grandmothers to take care of us and do our health good, being very rich in natural sugars and antioxidants.
